A fresh and beautiful pie featuring beautiful offerings from the Pacific Northwest.
1 container of Bellwether Farms Basket Ricotta
2 large eggs
1/2 cup granulated sugar
2 teaspoons ground nutmeg
1 large lemon (zested and juiced)
1 teaspoon salt
3 Tablespoons Oregon Growers Wildflower Honey
6 figs, cut into quarters
1 Silly Zak’s Gluten Free Pie Crust
Preheat oven to 350 degrees.
In a bowl, combine: ricotta, eggs, sugar, nutmeg, salt, lemon juice. Put into pie crust. Arrange figs on top. Bake for 45-60 minutes, or until skewer comes out clean. Put on wire rack. Allow to cool for 30 minutes. Drizzle honey over top of pie and garnish with lemon zest.
