Gluten-Free Apple Galette Recipe

This is a delicious gluten-free apple galette recipe. In French, a galette is a round and crusty type of pastry. While they have an epicurean and rustic look, they are easy to make. Bring a little bit of “douceur” to your table with a gluten-free version of a tasty apple galette. This beautiful pastry is the perfect dessert for your health-conscious guests. They won’t feel guilty about having a second or third slice! This version of classic apple galette is bursting with a sweet cinnamon flavor, perfectly complimenting the tart apples. This treat will smell better than any holiday candle when it’s baking in the oven!

For the Dough:

  • 1/2 cup tapioca starch (also known as tapioca flour)Gluten-Free Apple Galette Recipe
  • 1 1/4 cup blanched almond flour
  • 1/4 tsp salt
  • ice water
  • 1 tbsp coconut sugar
  • 1/2 cup cold butter cut into chunks
  • 1 Silly Zak’s Cinnamon Snack Square

For the Filling:

  • 3 peeled apples, sliced into 1/8 in slices
  • 1/2 tsp cinnamon
  • 1 tbsp coconut sugar
  • 1 egg yolk

Crust Method:

  1. Blend tapioca and almond flour, coconut sugar, Silly Square and salt in a food processor.  Add the butter until it looks like coarse flour. Add the ice water teaspoon by teaspoon. The dough should start to stick. Form a flat disk and put it between two sheets of parchment. Chill for two hours.
  2. Preheat your over to 350 degrees.

Filling Method:

  1. After the crust is chilled, mix the apple slices, coconut sugar, and cinnamon.
  2. In a separate bowl, whisk the egg yolk.

Now it’s time to put it all together.

  1. Take the dough out of the fridge and roll it into a 10-inch circle while it’s still in between the parchment paper.
  2. Place the apple slices in the center of the circle in a spiral shape. There should still be about 1 1/2 inches of dough around the edge.
  3. Fold the dough over the apples, pleating it as you go.
  4. Optional: Brush the crust with egg yolk and sprinkle with coconut sugar.
  5. Bake for 45 minutes. The apples should be soft and the crust should be golden brown.

I like this recipe as it is however why can’t I use SillyZak’s frozen gluten free pie shells for the bottom crust and the second pie shell for the top crust, making a large opening in the top crust before baking it? I actually did that to make my own artesian mincemeat pie. The finished look was rustic and the two pie shells did not make too thick an outer crust. Delicious, quick and efficient.
