You might love crunchy, cheesy crackers to snack on or to top with a smear of liver pate. But, what if you are gluten-free and can’t just reach for a box of those classic cheese bites that you just pop a handful of into your mouth?

It is possible to still enjoy cheese crackers when gluten is off the menu. We have a really easy recipe for gluten-free cheese crackers that are made using a pre-made pie crust, such as Silly Zak’s that you can purchase frozen. You won’t believe how simple and tasty this recipe is. Adults and kids will enjoy these.

Homemade Gluten-Free Cheese Crackers Recipe

Homemade Cheese CrackersThis recipe requires a large surface area, such as a clean countertop for rolling out the dough. The other equipment you will need is a rolling pin, a sheet pan, parchment paper, and a pastry brush. And of course, you need an oven.

Prep time: 15 minutes
Cook time: 6 minutes
Serves: 4 people

Ingredients:

  • 1 pre-made and uncooked gluten-free pie crust
  • 2 tablespoons extra virgin olive oil (EVOO)
  • 1/3 cup shredded Parmigiano Reggiano cheese
  • 1 teaspoon freshly ground black pepper (optional)
  • Neutral tasting gluten-free flour for rolling out the dough

Directions:

  1. Remove the pie crust from the freezer and allow it to rest for approximately 30 minutes to thaw out and soften.
  2. Preheat your oven to 450°F. Line a baking sheet with parchment paper. Brush the parchment paper with 1 tablespoon of the EVOO.
  3. Dust your countertop with a mild-tasting gluten-free flour, such as brown rice flour or millet flour. Place the pie crust on the counter. Dust the pie crust with a little more flour. Roll out the pie crust to 1/8 inch thickness. Brush EVOO on the pie crust and sprinkle the pepper over the crust. Add the cheese all over the crust.
  4. Cut the pie crust into 1-1/2 inch squares. Place these on the parchment-lined baking sheet.
  5. Put the pan with the crackers into the oven and cook for 6 minutes until the crackers start to puff up and are golden brown.
  6. Serve just the way they are or with a soft and spreadable pate.
