Silly Zak’s was born of a dream by our founding entrepreneur, Jeff Willson. Like many of us, Jeff was told by his physician that he should try giving up gluten. Jeff had a dream one night that caused him to bolt upright in bed: just because he couldn’t eat gluten any longer, that didn’t mean that he couldn’t eat dessert!
His dream transformed his celiac into Silly Zak, and Silly Zak can be enjoyed by all of those who suffered from celiac disease or a gluten intolerance. Jeff’s longtime friend, chef and serial restauranteur Dan LaFond, helped perfect their recipes and together they sought out others who couldn’t eat gluten. That was in 2010.
After years of working farmer’s markets, local grocery stores and local lunch counters, Jeff and Dan found success. Customers flocked to their initial gluten-free pie shell creations, and they became inspired to start creating other products: bread, pies, and now cinnamon bars.
As Silly Zak’s Gluten-Free Bakery has grown, our products can now be found in grocery stores across the West. But that’s not enough! They realized that there are additional baked goods that they want to share with the world.
To help that dream come true, Jeff and Dan partnered with Robert Sacks, a local businessman who also loves gluten-free baked goods, in 2018. Together, with a dedicated crew of incredibly hard-working bakers, and the loving support of their families, the folks at Silly Zak’s are setting out to make certain that celiacs and the gluten-intolerant will have light, tasty, and delicious baked goods to enjoy for every occasion!
